Detox Chicken Salad


I’m always looking for tasteful and creative ways to detox so I created this dish I call Detox Chicken Salad. It’s packed with omega-3 fatty acids, plant sterols, natural herbs with antioxidant properties and one of my favorite super foods: fresh blueberries (rated highest in antioxidants in over 40 fruits and vegetables because they contain high levels of antibacterial, antiviral and anti-aging compounds). Your entire family will love it and you’ll have the satisfaction knowing it’s good for them because of the obvious health benefits. Detox Chicken Salad
Makes 4-6 servings

2 cups cooked chicken breast (cubed)
½ cup Smart Balance mayonnaise
¼ cup fresh blueberries
1 tablespoon grated fresh orange peel
1 tablespoon chopped red onion
1 tablespoon chopped celery
3 teaspoon Detox spice blend
1 tablespoon chopped or sliced almonds (optional)

Detox Spice Blend:
¼ teaspoon each: black pepper, ginger root powder, cinnamon, crushed anise seeds, crushed coriander, turmeric powder, turbinado sugar, organic dandelion root, organic lavender buds, parsley flakes.

Add all ingredients to a medium to large mixing bowl (except the blueberries). Mix ingredients thoroughly and then gently fold in the fresh blueberries. Serve as an entrée with organic mixed field greens and tomato wedges or serve on whole grain bread with field greens and tomato slices.

Notes:
~You can substitute the Smart Balance mayonnaise with any low-fat mayo or you can use plain, non-fat yogurt.
~ If fresh blueberries are not in season, use frozen thawed blueberries. You may also substitute the blueberries with fresh cranberries.
~ For the spice blend, I used an Ayurvedic spice blend that has most of the spices listed above. It’s called Kapha Churna (Stimulating) Gourmet Seasoning and I purchased it online at http://www.mapi.com/en/1-800-255-8332/mindbodygourmet.html.
